I am an academic reference librarian in a medium sized university in Kansas. I coordinate and teach some of our information literacy classes, create online research guides, provide assistance to on-campus & distance students and work with faculty.

I thought more about the info lit instruction question you asked during my presentation. You might find my professor Michelle Simmon's presentation on Screencasting helpful. Maybe you could do a bunch of short screencast tutorials (here's how to access the databases..here's where you blah blah blah) that you use in your one-shot class, but they are also on your university library website, so students can access them anytime and you can refer to them when people are having trouble.
Not sure if the recording is up yet, but here's the link to it: https://sas.elluminate.com/mr.jnlp?suid=M.EC76FD524F88CD3AF93EEB884FE5BD&sid=2008350
